Despite the childish and nasty comments of the nayboobs -- Dolce Vita is an EXCELLENT restaurant -- a small business that chose to invest in Schenectady and doesn't deserve to be attacked by the partisan Know-Nothing teaparty/NNTP Republicants. These Nayboob Republicants have screwed the small businessperson and middle-class taxpayer for years --- they give huge tax breaks to multi-millionaires and mega-corporations while giving the hard-working people of America the shaft. Shame on the Nayboob Republicants for their attempts to harm small business in Schenectady County. |

Children's ties, children's books, children's accomplishments. Man-boy. Maybe he gets his cooking lessons from "GRAVEL-LAX GERTIE" or his "HAMBURGer" Helper. My grandmother came over from Italy at the turn of the century and made red sauces over chicken, beef, rabbit, and veal with melted cheeses, and put her meaty red sauces over macaroni too; and they grew terrific tomatoes. I make sauce like her and I don't even use sugar to sweeten it- I use Raisins and basil because the poor of southern Italy used WHAT THEY HAD. They didn't learn cooking from some GI in England in 1947 or some other idiocy. His arrogance and knowitallness is unreal! |

PS- I have NOTHING against that restaurant and think it is fine but you bragging that you go there is not exactly helping their business. People feel that sitting next to you during a nice meal is about as appealing as kissing a pretty girl who is passing a wet fart and who has crusty boogers on her lip. |

Since tomato-based sauces were NOT the mainstay of Italian cuisine but only a very recent trend (in the past 120 years), I encourage others to truly celebrate AUTHENTIC and TRADITIONAL Italian Cuisine by serving your next dish of pasta with a good pesto sauce or tossing the pasta with olive oil and fresh herbs. One of my favorite pestos is Pesto di Noce -- a pesto made with finely chopped walnuts. Pesto with Pistachios and Pesto with Pine Nuts are both excellent alternatives to the bottled tomato glop that most Americans drown their pasta with.
While we are on the subject of pasta, it is about time folks broke away from the same old -same old store-bought elbows and thin spaghetti --- be adventuresome. Make you own fresh pasta. Try new shapes and types of pasta. I love pasta made with farina di castagne (chestnut flour) -- every bite of this pasta draws you back through the many centuries of Italian history when wheat flour was scarce and too expensive. Besides, it is very healthy and tastes great. |
