My Dad used to make pepper hash. It was more of a relish I guess.............. he learned from his mother how to make it and I guess the recipe probably came here from Ireland. It's good with anything. This is the second year that my sister and I have made it. A pleasant afternoon in my kitchen........

But, did you use un-gassed, locally grown fruit?  Was it organic?  Was the salt kosher?  Onions locally harvested?

Or did you get gas after using locally grown organic fruit preserved with Kosher salt when you were harvesting onions?

Organic???
There are a lot of good reasons to choose locally-grown, organic produce when possible.  The "dirty dozen" worst fruit & veggies containing pesticides:

1.(worst) Celery
2.Peaches
3.Strawberries
4.Apples
5.Blueberries - U.S. Grown
6.Nectarines
7.Sweet Bell Peppers
8.Spinach
9.Kale and Collard Greens
10.Cherries
11.Potatoes
12.Grapes – Imported from outside U.S.

Even organic requires caution.  Remember the e-coli outbreak earlier this year from sprouts in Germany and other fruit with lesser e-coli outbreaks in other countries.
The only safe thing is to grow your own, and even then there can be issues.

actually....I'm gonna make that....I used to spend time canning peppers with my grandmother....vinegar and garlic.....ooooooooooooo....loved those babies after a few months....delish.....we
used to do eggplant too....

this past weekend I did a crap load of gulampki....I have 5 frozen meals...mmmmmmmmmmmmmmmmmm

I had a difficult time finding large cabbage heads...but finally paid off.....

Okay......one reply fits all.....

As far as I know all produce locally grown......last year we went to Shauls Farms,.... they lost most of their crops to the floods this year........sis went to Gades this year.......I only use Kosher salt here at Casa de Alias.....little lower sodium content......organic tends to cost more so I never go that route.........at my age just the sight of this stuff gives me gas.........don't care it's mmmmmm...good.......my brother gave us some habenero's last year which we added....went mild this year, brother'll be pissed  ......pesticides and e-coli always a concern.....wash thoroughly and cross your fingers.. .......Senders, bingo........being an apartment dweller makes grow your own challenging.....I usually have 1 tomato plant and lots of herbs on the deck......brother has a garden,,,,so do other friends.....they share........I also buy lots of fresh stuff that I freeze......gulampki......yes haven't had 'em since Mom passed, need to find a recipe.....

I don't tell other people where to purchase their produce -- I encourage buying local -- but the choice is up to each individual.  

As far as "organic" products -- I purchase produce that is not labeled organic.

As for salt -- we don't use much salt in our household -- sea salt is fine .. kosher is fine ... iodized is fine.
