The Super Bowl has kept Schenectady’s Restaurant Week short this year, but some restaurants are thinking about taking matters into their own hands. Cornell’s is one of several restaurants that have extended Restaurant Week in the past. The week starts Feb. 1 this year, and some restaurants may push it past its official Feb. 5 ending. But they’re going to skip the Sunday when the Super Bowl will be played. “Possibly we’ll extend it into next week,” owner JoAnn Aragosa said. “One more day would be great.” Others would like to add a whole week. Tim Trier, owner of Clinton’s Ditch, said the promotion has gotten so big, it needs more time. There are 26 restaurants participating this year.
